Grenache grown in the Moppa subregion of the Northern Barossa, tended by the Hoffman family. The fruit underwent a 12-day fermentation, with 10% whole bunches in open stainless-steel tanks using minimal punch downs for a semi-carbonic effect. A portion was fermented in wooden vats with gentle punch downs. After pressing, the wine was aged in seasoned French oak hogsheads (300L) for 12 months before being transferred to an old 1000L mixed oak Foudre for a further 6 months to preserve freshness. The wine was racked clean off lees and bottled with minimal sulfur addition.
